COCONUT POPCORN CHICKEN

Coconut Popcorn Chicken 2 Hubby whipped these babies up for the kids dinner one weekend and they were great. There was extra and we ate them with the kids whilst having a drink. The kids loved them and they would make a great nibble before dinner or as part of a cocktail party…

They are super quick and easy to make and really tasty…

Coconut Popcorn Chicken 3 Coconut Popcorn Chicken

Ingredients;

  • 1 chicken breast
  • 1 cup of bread crumbs (we use Panko)
  • 1 egg (lightly beaten)
  • 1/2 cup coconut (shredded)
  • Olive oil (to cook in)
  • Paper Towel (to drain the chicken)

Method;

Cut the breast of chicken in half and with the blunt edge of the knife try to flatten out the chicken.

Cut the chicken into small bite size pieces

Crack the egg into a bowl and lightly whisk

Dunk pieces of the chicken in the egg wash, then place onto a plate of combined bread crumbs & coconut

Place coated pieces on a separate plate really for frying.

Heat the olive oil (you could also use coconut oil) in frypan. Use enough oil to shallow fry in… approx. 1cm off the bottom of the pan.

Place the chicken in batches into hot oil and cook turning once. Once golden in colour and cooked through place on the paper towel to dry.

Serve as dinner with veggies or salad for the kids or as a warm canapé with drinks for the adults.

So there you have it… hubby’s coconut popcorn chicken. So much yum!

    This looks super yummy. I’m not a fan of cooking red meat, so if we’re going to be carnivorous, chicken is our choice. We make a chicken katsu which is similar to this without the coconut and bake the chicken in the oven which is a bit healthier, and safer (I don’t have a very good safety record in the frying department!) I love coconut oil though, it’s so versatile, isn’t it?

      I need to use coconut oil more but I admit I struggle with the flavour it imparts through everything. Oven baking is good. I actually made home made oven baked chicken nuggets last night and the kids and adults loved them. Jx

    Good one on two fronts! Getting the hubby to cook and coconut chicken. Chicken is most nights a week in this house and I have only really just started cracking on with coconut oil in all forms of cooking. Will have to try this out!

    I so totally wish my husband liked coconut because those look totally yummy! I may have to make them some weekend when he isn’t home.
