QUICK & EASY FRIED RICE

quick-and-easy-fried-rice This dish is super, super easy and quick and your kids will love it. Mine do which is a huge endorsement and I would only post it here if they did.

I made this up one night when I was totally disorganised and had no idea what I was going to cook the kids for dinner. They had recently started eating rice and I had bacon and I knew they loved that. So… I pulled together what I had in the fridge and made my own fried rice.

I have also served this to N and he enjoyed it as well. It’s quick and easy for dinner and just as quick and easy for lunch. I made this through the week for the kids and me for lunch.

Ingredients:

  • 1 x Packet Tilda Basmati Microwave Brown Rice
  • 3 x Spring onions (Shallots)
  • 4 x Rashers of Bacon (6 middle bacon rashers)
  • 1 x Egg
  • 1 x handful frozen baby peas
  • 1 x handful of frozen corn kernels
  • Olive oil for cooking
  • Salt & pepper for seasoning

Method:

Dice the bacon and slice the shallots. Put a little olive oil in your fry pan and when hot enough fry off your bacon and shallots. (keep a few slices of shallot for garnish)

At the same time place your rice in the microwave for 2 minutes to cook. When it’s cooked and your bacon and shallots are fried off, add the rice to the pan.

Stir through and turn the heat down a little so the rice doesn’t burn. Add a little more oil at this stage if you feel the dish needs it.

Add your peas and corn and keep stirring slowly to cook through. After 5 minutes add the egg. If I’m in a huge rush I just crack it straight into the pan and stir through. Ideally I like to beat the egg slightly in a bowl before adding it to the pan. As soon as the egg hits the pan stir it through the rice. Stir a couple of times and turn off the heat.

Serve up. Garnish with a little of the green part of the shallot and enjoy!! I love that it’s brown rice and the kids enjoy it.  You can always change the veggies around a bit and I even added carrot a couple of times as my kids will eat it. I dice it up and cook it off with the bacon and shallots.

      I love to know how you go. I’ve never been a big fan of rice but I really like this Tilda brown basmati.
